the Story
These breakfast tacos are a savory, indulgent twist on Taco Tuesday, inspired by the vibrant flavors and lively spirit of our favorite local cantina. Fluffy scrambled eggs are layered with a perfect blend of sharp cheddar and creamy Gruyère, adding a rich, cheesy melt in every bite. Crispy golden tater tots bring the perfect crunch, while a smoky, tangy red pepper crema ties everything together with a bold pop of flavor. Each taco is a delicious, satisfying combination of textures and tastes—creamy, crunchy, cheesy, and a little spicy—making them an irresistible way to start your day, or to turn any morning into a festive taco celebration.
the Ingredients (4 Tacos)
The Tacos:
4 Eggs
4 Corn Tortillas
16 Individual Tater Tots
4 for Each Taco,
Feel free to cook more Tater Tots for a side dish.
About 1 Cup of Cheddar/Gruyere Blend, grated
1/4 Cup of Grated Parmesan
Onion Salt, to taste
Garlic Powder, to taste
Cooking Spray
Optional Topping: Cilantro
Red Pepper Crema
1 Cup Sour Cream
1/2 Cup Roasted Red Peppers
1 Tablespoon Minced Garlic
Juice from 1 Lime
Onion Salt, to taste
Smoked Paprika, to taste
the Instructions
Preheat your Air Fryer to 400 Degrees. Once preheated, add as many frozen Tater Tots to the tray and cook according to the package instructions. Ours took around 20 minutes to cook. You will need 16 Tater Tots to form 4 Tacos. Once cooked, flatten all 16 Tater Tots with a fork, and set aside.
Grease a frying pan, and crack 4 Eggs directly onto the pan. Season each Egg with Onion Salt and Garlic Powder. Once the egg whites have solidified (about 2 minutes), break up the yolk with your spatula. Then, flip each egg and cook for an additional minute, or until each egg is fried to your liking. Once the eggs are cooked, set aside.
In a Food Processor, combine all the ingredients for the Red Pepper Crema and blend until smooth. Set aside.
Lay each Corn Tortilla on a flat working surface, and spray each side with cooking spray.
Place one Egg on each Corn Tortilla.
Then, Place 4 Flattened Tater Tots on top of each Egg.
Then, Sprinkle the Cheddar/Gruyere Blend over the Eggs and Flattened Tater Tots.
Place Two Tacos into the Air Fryer at a time (depending on the size of the Air Fryer) and cook for 2-3 minutes at 350 Degrees, or until the Cheese is melted.
Once All Tacos have been heated in the Air Fryer, plate the Tacos on Taco Stands, and Drizzle each Taco with the Red Pepper Crema.
Finally, top each Taco with a little bit of Parmesan & Cilantro, and Enjoy!
