the Story

Spinach cauliflower rice cakes are a delicious and wholesome twist on traditional savory cakes. Made with finely riced cauliflower, fresh spinach, and a blend of seasoning, these cakes are lightly crisp on the outside and tender on the inside. They are perfect as a healthy appetizer, a light lunch, or a flavorful side dish. Packed with nutrients, low in carbs, and naturally gluten-free, spinach cauliflower rice cakes are a satisfying option for anyone looking to add more vegetables to their meals without sacrificing taste.

the Ingredients

  • (2) 12 oz. Frozen Bags Cauliflower Rice, thawed

  • 1/2 Cup Spinach

  • 4 Cloves of Garlic, minced

  • 2 Eggs

  • 1/2 Cup Gluten Free Flour

  • Salt, to taste

  • Pepper, to taste

  • Grape Seed Oil, for frying

the Instructions

Preparing the Mixture:

  • In a large bowl, mix the cauliflower rice, spinach, garlic, eggs, salt, & pepper. Once mixed, stir in the flour and continue to mix, until well blended.

  • Then, form the mixture into patties, as you would for hamburgers.

  • Once formed, set aside and heat up a skillet on medium heat.

Frying the Cake Mixture:

  • Once the skillet is hot, add enough oil to coat the entire pan for frying.

  • Place each patty into the oil. Fry each side for about 4 minutes, or until golden brown. Depending on the size of the patty, it may take longer than the designated time.

  • Enjoy!
